Mango Pico De Gallo Recipe

What is pico de gallo?

Pico de gallo is a condiment that is made from fresh, uncooked vegetables and/or fruits. It can be a fresher, healthier alternative to salsa. The translation of pico de gallo is "rooster's beak". It has been said that pico de gallo was called "rooster's beak" because of the long, red, spicy peppers that were used to make it. I however, do not use long red spicy peppers in my recipe.

My preference is pico de gallo over salsa. I like the chunky, firm texture over the saucy texture of salsa. My favorite dish to top with pico de gallo is fish tacos. It can also be served with chips, burritos, and my son likes to eat it plain with nothing but a spoon. To each his own. :) This is one of my favorite recipes for pico de gallo, and I wanted to share it with you. Enjoy!

Make it your own

This recipe should be altered depending on the ingredients you favor; Add more of something if you like it better and less or none at all if you don't like a certain ingredient. Experiment, try some new ideas, and make it your own.



One version of pico de gallo

Ingredients

1 Cup Mango-Diced

1/4 Cup Purple Onion-Diced

1/4 Cup Fresh Cilantro-Chopped

1 Jalapeno Pepper-Seeded and Diced

1/4 Cup Red Bell Pepper-Diced

1/4 Cup Yellow Bell Pepper--Diced

1 Tablespoon Garlic-Minced

Juice of a Lemon or Lime


Directions

Mix all ingredients together in a large bowl and enjoy. Pico de Gallo is best when served fresh. It can be refrigerated but try to use it up within 24 hours. It will become mushy and juicy the longer it is stored.
